Apple Carrot Cranberry Scones | Commercial Dehydrators

Cranberry Apple Carrot Muffins are a delicious way to start your morning. These vegan muffins are hearty and healthy, loaded with apples, carrots, and cranberries. They're the perfect addition to breakfast or brunch!

Ingredients
  • 2 cups grated apples
  • 2 cups of carrot pulp (the leftovers when you make carrot juice)
  • 2 cups raisins (or chopped dates)
  • 1 cup fresh cranberries (or dried)
  • 2 cups ground almonds
  • 1 cup flax seed, mixed with 1 cup water
  • 2 tablespoons raw agave nectar
  • 3 tablespoons olive oil

  1. Pour all ingredients in a mixing bowl and mix with hands.
  2. Spoon mixture on lined dehydrator trays.
  3. Dehydrate at 105°F (41°C) to 115°F (46°C) for 4 hours, and then flip to the other side and dry for another 3 hours.
